Let me start with LAST weekend. One of Scott's best friends, Donny and his family threw this AMAZING 50th birthday party for Carmen, his mom. Now Carmen is like the all American mom every time I go over to their house she is always cooking, cleaning and making sure her family is taken care of. She truly is a wonderful role model and deserved this celebration. The party consisted of a DJ/kareoke(Scott LOVED this), awesome decorations, the best food(that I did not eat enough of) and pleanty to drink. They did her justice. Then Sunday afternoon rolls around and guess who gets and e-mail from her professor with a list of To - Do's before tomorrows class .......... there went my evening.
I won't go into complete detail about my first week back, but I can say that even though it was one of the most stressful, busiest, sleep deprived weeks of my college career I could not be more excited about my major! I love everything about accounting and it is great to be in class with other people that feel the same way. It is a little odd being in class with kids that are just barely 21, but everyone has been so nice and accepting of someone who is in a completely different chapter in life. It really boost my spirits when one of my fellow student was SHOCKED that I was 26 and married. YAY olive skin tone ....... or YAY her acting skills.
When I started this major I was concerned about the negative effect it would have on my dream and desire to be a mom. Last night I attended an Accounting Majors Orentation and all my fears were put to rest. I set at a table with two Baylor accounting alums, Mark and Elena, that were a wealth of information and actually made me think about working for a company/firm instead of teaching. People have this idea that accounting is a boring behind the desk all the time job when in actuality it is very exciting and you are not limited with your major. I am ready to take this semester head on and I am hoping for a 4.0 or at least a 3.5 so I am invited into the honors club, which I have heard looks amazing on your resume. So please keep me in your thoughts and prayers as I put my education HIGH above my social life .......... I hope friends and family understand. Not to mention my poor little Lola that has just been sitting at my feet all week while I study. Scott might be enjoying this considering he has full control of the TV and Football season has begun. :) I do have to say that he has been THE BEST this week, cooking dinner, bringing me coffee, and just going above and beyond to support me ....... I love that guy! <3
Before I end this Blog I want to give out a family favorite recipe. I got this recipe from my friend Kimmy who got married in 2009. Scott loves it and when I made it for his parent they all agreed that it was better then my MIL's. :) GO ME!! She is amazing and a great cook, so she let me have this one. This is the best meat-loaf I have ever had and it is so easy to make!
Old-Fashioned Meat Loaf
Prep Time: 10 minCook Time: 1 hr
Serves: 4 servings
Ingredients
- 1 pound ground beef
- 1 1/4 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 egg, lightly beaten
- 8 ounces canned diced tomatoes with juice
- 1/2 cup quick-cooking oats
Toppings
- 1/3 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon prepared mustard
Directions
Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.

Mix ingredients for topping and spread on loaf. Bake for 1 hour.
