OH HAPPY DAY ...... IT IS FRIDAY!!!

Well ............. I had HIGH hopes that I would be able to keep this blog up to date and then CLASSES STARTED!!! So not only did I have assignments due the FIRST day, but my job went from calm and boring to insane and chaos all in a matter of 24 hours.

Let me start with LAST weekend. One of Scott's best friends, Donny and his family threw this AMAZING 50th birthday party for Carmen, his mom. Now Carmen is like the all American mom every time I go over to their house she is always cooking, cleaning and making sure her family is taken care of. She truly is a wonderful role model and deserved this celebration. The party consisted of a DJ/kareoke(Scott LOVED this), awesome decorations, the best food(that I did not eat enough of) and pleanty to drink. They did her justice. Then Sunday afternoon rolls around and guess who gets and e-mail from her professor with a list of To - Do's before tomorrows class .......... there went my evening.

I won't go into complete detail about my first week back, but I can say that even though it was one of the most stressful, busiest, sleep deprived weeks of my college career I could not be more excited about my major! I love everything about accounting and it is great to be in class with other people that feel the same way. It is a little odd being in class with kids that are just barely 21, but everyone has been so nice and accepting of someone who is in a completely different chapter in life. It really boost my spirits when one of my fellow student was SHOCKED that I was 26 and married. YAY olive skin tone ....... or YAY her acting skills.

When I started this major I was concerned about the negative effect it would have on my dream and desire to be a mom. Last night I attended an Accounting Majors Orentation and all my fears were put to rest. I set at a table with two Baylor accounting alums, Mark and Elena, that were a wealth of information and actually made me think about working for a company/firm instead of teaching. People have this idea that accounting is a boring behind the desk all the time job when in actuality it is very exciting and you are not limited with your major. I am ready to take this semester head on and I am hoping for a 4.0 or at least a 3.5 so I am invited into the honors club, which I have heard looks amazing on your resume. So please keep me in your thoughts and prayers as I put my education HIGH above my social life .......... I hope friends and family understand. Not to mention my poor little Lola that has just been sitting at my feet all week while I study. Scott might be enjoying this considering he has full control of the TV and Football season has begun. :) I do have to say that he has been THE BEST this week, cooking dinner, bringing me coffee, and just going above and beyond to support me ....... I love that guy! <3

Before I end this Blog I want to give out a family favorite recipe. I got this recipe from my friend Kimmy who got married in 2009. Scott loves it and when I made it for his parent they all agreed that it was better then my MIL's. :) GO ME!! She is amazing and a great cook, so she let me have this one. This is the best meat-loaf I have ever had and it is so easy to make!

Old-Fashioned Meat Loaf

Prep Time: 10 min
Cook Time: 1 hr
Serves: 4 servings
Ingredients
  • 1 pound ground beef
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1 egg, lightly beaten
  • 8 ounces canned diced tomatoes with juice
  • 1/2 cup quick-cooking oats
Toppings 
  • 1/3 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon prepared mustard
Directions
Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.
Toppings
Mix ingredients for topping and spread on loaf. Bake for 1 hour.

Things I love Wednesday

I saw this post by a fellow blogger, Lia Joy, and thought it was a cute idea. It seems like there are a lot of people out there that love the same things as me or love things I should.

I am loving that I get to spend time with 2 sweet, beautiful, amazing friends this Sunday.

These two ladies are some of the best friends that a girl could ask for. Even though it has been years since we have all lived in the same city we still manage to experience all the major milestones of each others lives together. So the anxious anticipation to met Miss Chloe Elizabeth Martell was going to be NO different. Stacey and I put our heads together and are throwing Ashley a baby shower this Sunday, I cannot contain my excitement. I don't plan to have babies in the near future, but I love Love LOVE them and I am so happy for Ashley.

I am loving all music by Sara Bareilles or anyone that has a similar sound to hers. I was looking though the 2800 songs I have on my iTunes and it amazes me how much my taste in music has changed over the years. The only constant is Texas Country.

I am loving True Blood .......... YES I jumped on that Vampire bandwagon and like to call this my guilty pleasure. I am currently reading the books between homework assignments and it is just plan old good imaginative reading.

Last thing I am loving today is ........... My bedding from Pottery Barn!!!!! I was so excited to get this at one of my bridal showers and I just love EVERYTHING about it.


 Oh and I guess I can't forget LOVING these two, but I don't just love them on Wednesdays :)

So here we stand .......... in the beginning

I have never really blogged or much less kept a journal, but I feel as though I am in the most exciting time of my life. People always tell you that your college years or your early 20's are the best years of your life, but I would have to disagree. Maybe it is because I am still in college getting another degree, or because I had an unconventional childhood, but I feel like my life began the day I met Scott. For anyone that may read this and do not know me I will give you a very quick overview:

My childhood was not the typical kind, but hey whose family now a days is normal? I have been lost, broken and alone most of my life until I met Scott. He was shy, cute, funny and had a similar sense humor as me. I like to describe myself has the clown in my group of friends. Sometimes I mean to be funny and sometimes I say funny things on accident. To me is doesn't matter though I just love making people laugh. I felt like Scott was the same way, but has better timing. I am the awkward girl that loves to dress up, but would rather sleep 10 more minutes ....... meaning most of the time you will find me with no makeup on, hair in ponytail, and old navy flip flops on. Thank goodness Scott loves me no matter what I look like. Even though on the outside I seem like this great happy go lucky person my true friends knew the sadness that was in my heart. God truly blessed me with some wonderful people. Then after meeting Scott life began to change, he became my best friend and someone that I could show all my colors to. I tried my hardest to guard my heart and push him away, but as you can see that did not work. After almost 3 amazing years together we got married May 28, 2011, I can never remember being happier then I was that day. I smiled the entire time and I am still smiling.

I am not going to say that married life has been easy, but it has been a wonderful journey so far. We bicker like an old married couple, but it is all out of fun. We never say anything to hurt one another, but basically argue on who had the better idea or which movie was more exciting. We stay true to the fact that we are two individual people that are just very much in love. I used to love to go out and be social all the time, but now a great weekend to me consist of organizing the house, having friends over, and trying out new recipes. I knew at an early age that I wanted to be a wife, mother and homemaker, but I never thought it would start this soon.

Friday night Scott and I stayed in and watched a great movie called "The Lincoln Lawyer". I am all for exciting dramatic movies that also do not lack in the eye candy department .......... I can already tell you I will be hearing about that statement when I get home. ;) The rest of the weekend was calm and relaxing until Sunday .......... OH SUNDAY! A day of relaxation right?!?! Not in our case. We were running around everywhere trying to get some last minute decorations ready before we had friends for dinner. I wanted to impress Nadaya and Owen with all the cool wedding stuff we got and my new found domestic skills by making homemade pizza and ice cream ............ pizza was a hit ........... the ice cream was mush. I am not sure what I did wrong, I followed the directions perfectly and even woke up early so it could chill long enough. Obviously I did something wrong though, because we definitely did not get to enjoy my creation ..... or lack there of.

As our summer classes come to an end I can only think about looking towards the future. I am stressed about my courses in the Fall and have told Scott he might not have a wife this next semester. Some may not know that I am going for my BBA in accounting and then hopefully the extra grad school year, this meaning my grades hold more of an importance then just passing. My sweet friend and bridesmaid, Erin, is insanely smart and decided to tell this not nearly as smart worry wart that she struggle in one of these classes. OH JOY ......said in the MOST sarcastic tone possible. So if anyone out there has advice on Intermediate Financial Accounting OR Accounting Information Systems, I am all ears .... ehhhh well all eyes in this case...........
